The Best Eggnog Is Made With Toasted Marshmallow

The best eggnog ever is made with toasted marshmallows you can make right in your Christmas fireplace over the warm, cozy, yule log. It’s a bold claim, I know, but just wait till you taste perfectly charred marshmallow dripping with beautifully, boozy, eggnog.

Eggnog: The Reason For The Season

OK maybe it’s peace on Earth and good will toward men, but damn if eggnog is not a close second. Classic eggnog is a simple thing to make. Just blend eggs till they are frothy. Add sugar, booze, nutmeg, milk and cream. If you want my favorite recipe for a basic plain eggnog, check out Jeffrey Morganthaler’s recipe. It’s that recipe that I adapted for this Toasted Marshmallow Eggnog and it makes a perfect jumping off point for anyone who wants to get creative with their holiday cocktails. Well that’s exactly what we are going to do today so let’s get nogging!

Toasted Marshmallows

Torani Toasted Marshmallow Syrup

OK, so the original Morganthaler recipe calls for 3 ounces (by volume) of superfine sugar. That’s what gives eggnog it’s sweetness and that’s where we are going to make our big alteration. Instead of sugar, we’ll be using Toasted Marshmallow syrup. Torani makes it and it’s about 10 dollars a bottle.

Next, let’s talk about our garnish. This drink requires (not optional – seriously) a garnish of toasted marshmallows on top. Here’s why I love this recipe. If, on Christmas, when everybody is unwrapping their gifts in front of the hearth, you can stick some marshmallows on a skewer and cook them over an open fire. Just let them cool and plop them on top of your beverage. If you don’t have a fireplace, just use your stove burner. So, toast some marshmallows just like you’re making s’mores over the campfire!

Blend Until Heavenly

Now that you have your sweetness and your garnish, it’s time to get blending. First, crack two eggs into a blender. Turn the blender on medium and let it go for 1 minute. Gradually pour the toasted marshmallow syrup in and continue blending for a minute more. So, yu’ve got your sugar and now it’s time for some spice. Add freshly ground nutmeg and cinnamon into the blender while it’s still running and then add in everything nice. Pour in two ounces each of brandy and spiced rum (Captain Morgan’s, Sailor Jerry’s, Admiral Nelson’s are all good). Finish by adding whole milk and heavy cream and blend for a few seconds more. Chill the nog to let the flavors blend and serve cold. To serve, pour into a martini or coupé glass and top with a couple of toasted marshmallows. Those eggnog dipped marshmallows are the most delicious thing you will have this Xmas.

  • 2 Large Eggs
  • 3 Ounces Toasted Marshmallow Syrup
  • 1 Teaspoon Freshly-Grated Nutmeg
  • 1/4 Teaspoon Freshly-Grated Nutmeg
  • 2 Ounces Brandy
  • 2 Ounces Spiced Rum
  • 6 Ounces Whole Milk
  • 4 Ounces Heavy Cream
  • 8 Marshmallows


  1. Toast Marshmallows on a skewer over an open flame.
  2. Add eggs to a blender and blend on medium speed. Gradually add the Toasted Marshmallow Syrup and continue to blend for another minute. With the blender still running, add nutmeg, cinnamon, booze, and dairy. Blend for a few seconds more until well combined.
  3. Immediately chill the eggnog to let the flavors blend.
