Roasted Garlic Salt
Roasted Garlic Salt that goes on everything.

Preaheat oven to 400ºF.

Place the whole head of garlic on a sheet of aluminum foil and drizzle with 1 tablespoon extra virgin olive oil. Wrap up the garlic forming a pouch.

Place pouch in the oven and roast for 30 – 40 minutes.

Remove from the oven and turn it down to 200ºF.

Break up the garlic head and squeeze the garlic into a glass 9″x13″ glass baking dish. Mash the cloves into a puree with a fork. Discard the skins.

Pour the kosher salt over the garlic puree and mix it all together. Break up any lumps with a fork and spread the mixture out evenly.

Place the dish in the oven and cook for 20 – 30 minutes more. It’s ready when it’s dry to the touch.

Break up the salt with a fork.
Optional Step: If you want a fine salt, grind it with a mortar and pestle or force it through a fine mesh sieve.
