Do it yourself flavored garlic is surpisingly simple. You can make your own Roasted garlic Salt that you can sprinkle on everything in under an hour.

Roasted garlic salt is the perfect way to flavor tons of snacks.  You can put it on popcorn, kale chips, french fries or really anything you like. Making roasted garlic salt is actually fairly simple.  This recipe is only 3 ingredients: one head of garlic, kosher salt, and olive oil.

To get started preheat your oven to 400°F.  Lay out a sheet of aluminum foil and place the head of garlic (yes the whole head) on top. Drizzle the olive oil on top and wrap up the garlic head in a pouch.  Roast the garlic in the oven for 30 – 40 minutes.  By the end, the cloves should be nice and soft.  Take it out of the oven and lower the oven to 200°F. Break up the head and cool for a minute because it might be to hot to handle.  The garlic should squeeze out of the clove’s skins.  Mash the garlic in a 9″x13″ glass baking pan into a nice puree.  Spread it out and cover with 1 cup of kosher salt.  Mix the whole thing up making sure to break up any lumps, and spread it out evenly.

Put the pan in the oven and roast for an additional 20-30 minutes.  This is to dry out the garlic puree so low and slow is key here.  The garlic salt should be ready when it’s dry to the touch.  What follows is optional.

Optional step:

I wanted the roasted  garlic salt to go on popcorn so I wanted a fine powder.  To do this, I ground the mixture up in a mortar and pestle.  If you don’t have one a fine mesh sieve and a spoon will do the trick.

Ingredients

  • 1 Head of Garlic
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 Cup Kosher Salt

Instructions

  1. Preaheat oven to 400ºF.
  2. Place the whole head of garlic on a sheet of aluminum foil and drizzle with 1 tablespoon extra virgin olive oil. Wrap up the garlic forming a pouch.
  3. Place pouch in the oven and roast for 30 – 40 minutes.
  4. Remove from the oven and turn it down to 200ºF.
  5. Break up the garlic head and squeeze the garlic into a glass 9″x13″ glass baking dish. Mash the cloves into a puree with a fork. Discard the skins.
  6. Pour the kosher salt over the garlic puree and mix it all together. Break up any lumps with a fork and spread the mixture out evenly.
  7. Place the dish in the oven and cook for 20 – 30 minutes more. It’s ready when it’s dry to the touch.
  8. Break up the salt with a fork.

Recipe Notes

Optional Step: If you want a fine salt, grind it with a mortar and pestle or force it through a fine mesh sieve.

  1. How long does this salt keep ? Do you need to refrigerate ?

    1. Hey Maria,
      It’s just salt and garlic so I’d say it would keep for a good long while. It should last for 1 year in a cool dark place (spice cabinet) no need to refrigerate it.
