Gradually add the sugar and stir until fully dissolved. Add the pumpkin spice and purée. Stir until dissolved.
Transfer to a mason jar and let cool, uncovered. Store in the fridge until needed.
For The Daiquiri
Place half an egg white into a cocktail shaker. Cover and shake vigorously for 30 seconds.
Add ice, rum, lime juice and pumpkin syrup to the shaker and shake for another 15 seconds.
Pour into a coupé or martini glass and grate fresh nutmeg and cinnamon on top.
Garnish with a star anise.
Recipe Notes
This recipe is for 1 drink but can easily be scaled up. If you do make more than one at a time the head will pour last, so fill each glass at least halfway.
