Ingredients

  • 1 Loaf Irish Soda Bread
  • 4 Large Eggs
  • 1/2 Cup Bailey's Irish Cream
  • 2 Teaspoons Light Brown Sugar
  • 1 1/4 Teaspoons Freshly Grated Cinnamon
  • 1/2 Teaspoon Freshly Grated Nutmeg

Instructions

  1. Slice the soda bread into 3/4 inch thick slices. Lay them out in a single layer and let them sit overnight.
  2. In a medium bowl, whisk 4 large eggs. Add the Irish Cream, light brown sugar, cinnamon, nutmeg and whisk some more. Pour the mixture into a glass 9 x 13 inch roasting pan.
  3. Lay the slices out in the mixture in a single layer and let them soak it up for 10 minutes. Flip and soak for 10 minutes more.
  4. Preheat a griddle or a large cast iron skillet over medium heat for 5 minutes. Add a tablespoon of butter and let it melt.
  5. Working in batches, add as many slices of bread as you can without overcrowding the pan and cook for 3 minutes. Flip and cook the other side for 2. Remove from pan and serve hot.
