1CupChocolate Balsamic Vinegar
For the Margaritas
1/4Watermelon
1CupTequila
1/2CupLime Juice
1/2CupTriple Sec
1TablespoonAgave Syrup
Ice Cubes
Instructions
For the Balsamic Reduction
In a small saucepan over medium heat, add 1 cup of chocolate balsamic and bring to a boil. Simmer until reduced by 1/4 and slightly syrupy (about 2-3 minutes). Remove from heat and let cool.
For The Margaritas
Heat a grill over high heat. Slice the watermelon and grill the slices for 5 minutes on each side. Transfer to a rimmed cookie sheet and allow to cool. Cut watermelon into cubes and discard any accumulated water.
Add 2 cups cubed watermelon into a blender. Add the tequila, lime juice, triple sec, and agave syrup. Fill blender with ice and puree until smooth.
Pour into margarita glasses and top with droplets of balsamic reduction. Garnish with a small slice of grilled watermelon.
Recipe Notes
You will have leftover balsamic reduction. Save it and drizzle it on anything you make in the future. Salting the rim is optional and it was not to my taste, but if you like a salted rim then more power to you.
