Yup! So, I’m starting up a cocktail Friday segment of Nomageddon. What do you think “Drink Like There’s No Tomorrow”? Eh, that sounds like a road to alcoholism. I’m still working on it. Anyway, today I’m going to show you how to make your next Halloween Party embarrassingly awesome.

Embarrassing is right. Well this isn’t my recipe but I’ve been collaborating with a mixologist who wishes to remain anonymous. We’re just going to call him Mr. Hyde.
Making the daiquiri is a two-step process. You’re going to have to do this first part ahead. We are going to need to make the pumpkin spice syrup. It’s fairly easy and it’s just a variation of simple syrup.

But How Do You Make Simple Syrup?

Simple! It’s just a syrup made of equal parts water and sugar. So to get started boil a cup of water in a pot. Then gradually add the cane sugar to the water until it all has dissolved. Add a tablespoon of pumpkin spice and let that dissolve. Last, 3 tablespoons of pumpkin puree. Now I’m not saying you HAVE to, but I highly recommend you make your own. Conveniently, I just posted a how to yesterday. Click the link in this post for instructions. If you decide to go the easy way out, you can get store bought canned pumpkin; usually sold under the brand name Libby’s.

Make Your Own Pumpkin Puree

DIY Pumpkin Puree

Did you know it’s really easy to make your own pumpkin puree? You can do it in an hour and this recipe uses a secret ingredient.[/twocol_one_last]
Once everything is fully dissolved, pour it into a mason jar and let it cool uncovered. Refrigerate until you’re ready to use it.
Pumpkin Spice Syrup
Once it’s chilled and the party’s started, you can get to making the PSDs. First, you’re going to need some gear, but nothing a good bar should go without.

You can see in the list above that I prefer stainless steel. It’s because it’s dishwasher safe and is BPA free. Well it should be at least. I, myself try and stay away from plastic cookware.
Also, for this recipe we used Zacapa 23 Solera Rum. It’s really great rum that goes for about $30 a bottle and you could go more basic, but trust me, this is some good stuff.
Got your gear? Good! Let’s mix some dranks! Juice your lime, and separate your egg white. Add half the egg white, cover, and shake vigorously for 30 seconds. This will give it a good froth and will give the drink a big creamy head.

Come on! Let’s be adults here! Next, add the rum, lime juice, and pumpkin syrup, cover and shake hard for 15 seconds. Strain into a coupe or martini glass and grate some cinnamon and finely grated nutmeg on top. Garnish with a star anise or cinnamon stick.
Dudes. You just made a Pumpkin Spice Daiquiri, if your guests are not impressed, they’re dead inside.

Pumpkin Spice Daiquiri

A Pumpkin Spice Cocktail! #PSL? NO! #PSD!

Ingredients

For The Pumpkin Spice Syrup

  • 1 Cup Water
  • 1 Cup Cane sugar
  • 1 Tsp Pumpkin Pie Spice
  • 3 Tbsp Fresh Pumpkin Purรฉe Can Substitute Canned

For The Pumpkin Spice Daiquiri

  • 2 oz Zacapa 23 Solera Rum
  • 1 oz Pumpkin Spice Syrup
  • 1/3 Oz Lime Juice
  • 1/2 An Egg White
  • Freshly Grated Nutmeg And Cinnamon

Instructions

For the Syrup

  1. Bring water to a boil in a small sauce pan.
  2. Gradually add the sugar and stir until fully dissolved. Add the pumpkin spice and purรฉe. Stir until dissolved.
  3. Transfer to a mason jar and let cool, uncovered. Store in the fridge until needed.

For The Daiquiri

  1. Place half an egg white into a cocktail shaker. Cover and shake vigorously for 30 seconds.
  2. Add ice, rum, lime juice and pumpkin syrup to the shaker and shake for another 15 seconds.
  3. Pour into a coupรฉ or martini glass and grate fresh nutmeg and cinnamon on top.
  4. Garnish with a star anise.

Recipe Notes

This recipe is for 1 drink but can easily be scaled up. If you do make more than one at a time the head will pour last, so fill each glass at least halfway.

      Sure! The egg white is there for texture. If you are vegan you can make a frothy head with aquafaba. It’s literally the water from a chickpea can. You can throw it in the blender and whip it up until it’s foamy and bam, vegan egg white.
